Happy B-Day Clyde!

We went to dinner last night to celebrate Clyde's Birthday which was earlier this week. Of course On The Border was the restaurant of choice - yum! We all love OTB!

As you can see from the fear in Clyde's eyes - the birthday singers were coming for him!! :)
And you know what that means - dessert! Elena (and Daddy's) favorite part!
Before we headed home, Elena took a few laps around the restaurant to make sure she got to tell everyone hi!
Back at home we found out that CJ isn't sure if he likes girls just yet, maybe next Valentine's he will!
But he is a fan of jumping in the jumper!!

It seems like just yesterday Elena was jumping in it! It made me kind of sad to get it out and realize how much she has grown!

Flashback Friday - Valentine's Day.

I remember the 1st Valentine's day that Robert and I were a couple - it was 6 years ago! I was a senior in college at Newman and it was during basketball season. We had a road game that day and we didn't get back into town until late in the evening. Robert had asked me to come over when we got back and when I got over to his house he had a card, some candy and a bottle of wine waiting for me. And best of all, he had cooked me dinner for the very first time - he had made fried rice and teriyaki steak! It was so yummy!! The funny thing is I have been sitting here racking my brain and for the life of me I can't remember what I got for him! Isn't that terrible? His gift was obviously better than mine so maybe I just blocked it out! Ha ha! Here are a couple of my favorite "romantic" pictures that I have of us from when we had our engagement pictures taken.

Key Lime Pie Parfaits.

I recieved a Cooking Light cookbook a few years ago for Christmas and have finally tried my first recipe from it - Key Lime Pie Parfaits. Now I am not a big fan of Key Lime anything but my hubby loves it as well as my friends Lindsay and Rowe. So I sacraficed for the majority on Monday and we tried whipping up this tasty dessert. They sort of look like the picture don't you think?

The funny thing is we used some of Elena's cups to put the parfaits in :)
These were very yummy. The key lime-ers loved them and I even liked it!
Yum! We enjoyed these while watching The Bachelor ~ don't even get me started about Ali leaving! Next week we are going to try the same recipe with oranges instead of limes - I am very excited about this!!
  
For those of you who would like to give it a try here is the recipe:
1/2 C fresh lime juice (I couldn't find any key limes so I just used regular ones)
1/4 C sugar (I used Splenda to save on some calories)
1/4 t grated lime rind
2 large eggs
1 (14oz) can fat-free sweetened condensed milk
1 1/2 C canned whipped light cream (Reddi-wip)
1 C graham cracker crumbs

1. Combine first 5 ingredients in a large bowl, stirring with a whisk until smooth; pour into top of a double boiler. Cook over simmering water until mixture thickens (about 6 min), stirring constantly. Remove from heat. Place pan in a large ice-filled bowl 20 min or until mixture cools to room temperature, stirring occasionally.
2. Spoon 1 tablespoon whipped cream into each of 8 (8oz) glasses; top each serving with 1 tablespoon crumbs and 3 tablespoons lime mixture. Repeat layers once, ending with lime mixture. Top each serving with 1 tablespoon whipped cream. Serve immediately.
Makes 8 servings, 1 serving=1 parfait

Daddy's Home!

Robert has been out of town for a few weeks for work and he came home on Saturday!! We were so excited to see him - Elena said "da da da da da da" all the way to the airport.
Elena always takes a ride on the suitcase back out to the car after we pick him up. It's pretty cute.:)
Robert always brings Elena a little something back from where he has been. This time he brought her an armadillo from El Paso - and she just loved it!
It is kind of funny how much she likes it - I mean it is an armadillo after all! She even tries to share her sippy cup with it which I don't think she has ever done with any other stuffed animal before. He is now named Dilly because that is about how armadillo sounds when she tries to say it.
We have had a very relaxed and laid back weekend. We put up some cute Valentine window clings ~
Hung out with Daddy ~
and of course watched the Super Bowl with some friends ~
Elena got to spend some time with her buddy CJ - he is getting so big!
CJ seemed a little bit upset that the Saints won - ha ha!
Elena wasn't really paying attention to the game - she was more interested in running around and being the center of attention - big surprise!
We have had such a great time with Robert home and are looking foward to spending a lot of time with him!
